We held our 5th and last cooking class of the season Sunday March 20th. Please don’t be alarmed, we start up again in 2 weeks. Chef Nur put on a Traditional Turkish Breakfast.
She started out showing us, “Sigara Borek”. This was a potato and leek pastry shaped like a cigar. They were then brushed with a yogurt wash and baked until crispy. Then she prepared “Menemen” This national egg dish was as delicate as any French Quiche. Chef Nur sautéed onions, green peppers, garlic and peeled fresh tomatoes. We then added beaten eggs. It was cooked on the stove top. She sprinkled grated mozzarella cheese on top and covered the pan to finish cooking.
This Turkish Breakfast was completed with assorted jams, fresh cream and honey, sliced tomatoes, sliced cucumbers, white cheeses, helva, black and green olives. We drank Turkish Tea.
To accompany all this food was the bread. “Simit” a Turkish Bagel with sesame seeds and fresh pita bread from the Bosna Market of Manchester.
We say to Chef Nur, “Ellerine Saglik”! The translation is “Health for your hands”
